Eddie Merlot’s Introduces 32 New and Revised Recipes

Eddie Merlot’s in North Scottsdale is introducing exciting changes to its menu. Bill Humphries, the founder of Eddie Merlot’s, is preparing his 13 restaurants for changes that he believes will transform dining.

“People are looking to be entertained not just to eat great food,” he says. “Our restaurants will be adding 32 new or revised recipes to keep the restaurants ahead of culinary, entertainment and hospitality trends.”

Eddie Merlot’s new menu will feature tantalizing items. The true beef aficionado will be impressed with the platinum cut platter, a combination of Wylarah filet mignon, Greg Norman Signature wagyu bone-in New York strip and Prime 35-day dry aged Tomahawk rib-eye features three of the best steaks in the world. Bill says a new burrata and heirloom tomato salad, veal Franciscan style and bucatini pasta with butternut squash puree are all great options to accommodate any diner in your group.

Executive chef Robert Seymour features several new appetizers which include Maryland jumbo lump crab cake and tuna sashimi. The wild-caught yellowfin tuna is center cut, crusted with sesame seeds, lightly seared in sesame oil and served rare over seaweed salad.

“We also feature this tuna as an entrée served with asparagus, shiitake mushrooms and scallions over furikake rice,” Robert says.

A new side dish of house-made tater tots topped with fresh shaved black truffles is incredibly decadent. Other new side dishes include scalloped potatoes with a savory cheese sauce accented with jalapeño, roasted root vegetables spiced with Moroccan harissa and wild shiitake, cremini and portabella mushroom sauté.

No visit to Eddie Merlot’s is complete without have one of their signature desserts; the addition of classic baked Alaska is not going to make your decision any easier. You can watch as your server flambés the Italian meringue that surrounds luscious sponge cake and Neapolitan ice cream. A delicious show to finish the meal!
